Tempeh Mango Salad and Sunny Muffins

The Curried Tempeh Mango Salad from VWAV sure does make the perfect summer lunch! This salad is truly excellent and I have been eating it nonstop. I had imagined that it would be a strange combination of flavors and that it would taste strongly of curry, but it doesn't at all and every flavor comes through equally and in harmony with one another. In a sandwich or wraooed a whole grain tortilla, this salad is the perfect meal after my yoga class!


Another great summer recipe is the Sunny Corn Blueberry Muffins (also from VWAV- I've been going back to this cookbook a lot to try so many of the recipes that I haven't gotten to yet!). They got the "thumbs up" from my family, even my picky sister! I had to freeze a few so I would be able to try one since my sister ate about five in one day and I was afraid that they would be gone too soon! I only wish that I had made these with blueberries from the farmer's market since the blueberries I got from the store weren't very sweet or flavorful and I can only imagine how delicious these muffins would be with great berries!

Oh wow oh wow, that tempeh mango salad! It sounds so refreshing and wonderful!

Your corn muffins look so fluffy, wow. Yum. Sadly I made too many variations when I made them a few months ago and they turned out to be mediocre. I think it was omitting the soy yogurt was my mistake... And I bet you're right, that farmers' market blueberries would make them extra awesome.

Oh I definitely need to make that tempeh mango salad! It sounds and looks so good. Maybe I can get to my library today to check out the recipe.

The Sunny Blueberry Corn muffins are one of my favorite muffins - period!

I bet these would be great with fresh, plump local blueberries!

The tempeh mango salad looks so good! I've never tried that recipe, but I loooove sandwiches like that.

Hey. I just stumbled across your blog today. I just wanted to tell you that you are truely an inspriation. I'm 17 and have been a vegetarian for almost a year. I've wanted to try veganism, but with a family of only meat eaters it is hard to do.

I get fondant at Michaels craft stores, or Joann Craft stores (I've heard they also sell it at Walmart, but I haven't been in a few years, so I'm not sure about that).

If you can't find it at any of these places, maybe you can order some from Wilton.com. Good luck finding it, because it's soooo much fun!

I could sure go for those tasty-looking muffins right about now. The trouble is, fresh blueberries are so good right now, I always end up just eating them raw before I can bake with them!
